You have to sharpen these every time you use them and/or wash them. Other Thoughts: I reccomend anything made of Hich Carbon Surgical Stainless steel.. It stays sharp a lot longer... Also, Cutco has the best customer reputation (not the same s worker reputation, but they deal with bratty college kids), is made in New York, and guarantee their stuff FOREVER (and have been in business for over 60 years)... Other Thoughts: I should have read closely when I ordered. The serrated edges make most of the knives useless in the kitchen at any price. The blades run completely through the handles, and they would be reasonably comfortable to use. Cons: Except for the chef's knife they are serrated, in fact calling these knives is a misnomer, these are saws. Even the paring knife is serrated. Not good for slicing onions or meat since they tear the fiber too much. They can't really be sharpened, should they need it, and the blade finish leaves a lot to be desired. The edges look like they have burrs on them from a machining process. Other Thoughts: I bought these intending to use them as a Christmas gift for an acquaintance that insists on sending me a yearly gift, but this could be too embarrassing. Serrated knives are good with cooked steak and sawing fresh bread without compacting it - but that is their ONLY use in my opinion.
