I'm looking to buy this for my sister to play Sims 4. Will this computer run the game reasonably well?

Yes, you will meet the requirements for the game. At the most you will probably get medium settings. If you use custom graphics settings, you might be able to get slightly better than medium. However, you just won't really be running in the high graphics setting since the APU is relatively weak, BUT, not relatively strong either. CPU and RAM will be good enough.

How well can this run games like League of Legends and Counter Strike:GO?

On medium you will be ok, but it is better to get a notebook with a dedicated GPU in the GTX lines if you want to enjoy gaming on a notebook. Also the integrated GPU on this machine hardware reserves your ram too much. In my situation I have 8.0GB RAM installed but it is hardware reserved down to where 6.5GB is useable.

Is the max ram capacity 8gb, will it hold 16gb?? Will it run a single 8gb stick or does it need to be two 4gb?

Has anyone found or made a reliable guide for upgrading the ram on this machine? I want to add 8GB of RAM, but I haven't really found anywhere that says how to, only that upgrading this model's RAM is a pain. Thanks.

are there any available laptops with windows 7 instead of 8. or can this computer be downgraded to windows 7?

From what I can tell this laptop have the windows key built into the bios. So technically you should be able to wipe and reinstall with a 7 disk. Although I have read that windows 8 is only downgradeable if its a pro version. I think this laptop comes with the standard edition.

Does anyone know if there is still a SATA port inside the empty optical bay?  Tossing a SSD in with one of those nifty bay adapters seems like a great idea.

Yes there is one. There's just a dummy piece of plastic where a disc drive would go. Buy a 9mm caddy and you can get the bezel/bracket from Acer. I had to call a few times to get someone who would actually get me one (because the laptop doesn't ship with it).

Can the memory be upgraded to at least 8GB?

Yes, but the process involves opening laptop up and removing the motherboard as the ram is located underneath the motherboard. Most laptops have a little latch on the underside, but not this one. Once the motherboard is removed there are two DDR3 slots. Remember, the fastest ram that this processor supports is 1600MHz. I replaced the 4GB DDR3 1600 CAS 11 that came with this with this: http://www.newegg.com/Product/Product.aspx?Item=N82E16820231703 8GB DDR3 1600 CAS 9. Also threw in an SSD for good measure and now this laptop is screaming fast, and not bad running games at medium-high settings.
