Your PSU could be somewhere around your peak usage. For example, with a 65W CPU and a GTX 1060 6GB using ~90W during an intensive game, that adds up to 155W. Add another 15W for other components and you get 170W. Then double it and you get 340W, which is the PSU rating you should aim for. You can get away with less, and a system that uses 300W could use a 450W PSU without issues, but the optimal amount is roughly to occupy 50% of your PSU's max rating. You won't find a lot of low wattage PSUs, so a 450W PSU will cover almost any low to mid range computer.

I cannot include a link, but any mainstream 8th gen intel cpu should work, such as the i3 8100, i5 8400, i7 8700k, etc.

Is there only the one extra fan headder?

Planning on building a budget editing rig for my friend with a i3 8100. Will i need to purchase a fanhub to get enough cooling?

There's 3 total 2 for the cpu and one next to the ram. I ended up buying a phanteks fan hub for the 80mm 2 rear fans added. I've purchased a couple of these boards I kinda wish I would have went with the gaming one for better fan control on my 8700k build. It has 2 USB 2 ports. The rest are USB 3 or 3.1 which are backwards compatible with usb2

Would internal graphic card on the board able to support 2 monitors or 3 monitors? (1080p for all)

It depends if you are only using intel integrated graphics, then it will only be able to support up to 2 monitors, not 3. But it should be able to do 1080p for those 2 monitors however, if you are planning on gaming on just intel integrated graphics I would not recommend it.
