Why does the asus website and the pictures from asus claim 165hz but it says max hertz is 155?

So It is actually 144hz. The monitor does have overclocking options to 165 IF you're using displayport instead of hdmi. I believe that required DP 2.0 though.

What happens if I get one that has / develops a dead pixel?

If it's within 30 days of the purchase, you could return it to Newegg for a replacement/refund and order again.

If it's outside that window, I believe Asus defines the warranty as 4 or more dead pixels being required for an RMA.
If I remember correctly, they had a separate value if it's a stuck pixel. I believe it had to be 6 or more.

I've had this happen. I ordered this monitor twice, from 2 separate stores. First monitor arrived with a the backlight DOA. Second monitor, I stopped counting the dead pixels when I hit over 10. I returned both and switched brands.

When windows puts this monitor to sleep (connected to display port) does it disconnect from the PC and have to "reconnect" on wake? AKA is there a deep sleep mode and a disable deep sleep mode?

No. It has two HDMI inputs and one DisplayPort input.  For output all it has is a 3.5mm audio jack.
