Yes, the 570 series will work. Just make sure to follow instruction with your motherboard for the slots when using only 2 RAM sticks. If you want to double-check to make sure, you can go to Asrock's website and they'll have the compatibility of the RAM.

Question 2

I'm confused.  The Ryzen 7 3700 specifies DDR4 3200 but this says it is DDR4 3600.  How is this optimized for Ryzen 3000 series?

Yes, depending on the MoBo you can use XMP (D.O.C.P in AMD) to set its speed to a pretty wide range of clock speeds. I would highly suggest installing it into something x570 for you best chances to get this working. I am using the Asus Tuf x570 board and after getting the sticks into the right slows (A2 and B2) I was able to use DOCP to run them at 3600.

I have a R7 3800x paired with an ASUS crosshair vii wi-fi. Any issues? There's no QVL that I could find for 3rd gen on this board.

I purchased this kit for my R7 3800X also... The default XMP profile for these was pre-tested and validated for AMD, and it works beautifully! I have done some minor overclock adjustments, and these have timings that can be tightened up nicely! I'm using an MSI MPG Gaming Edge Wifi X570 board.

If I have the 2x8GB sticks in my computer now, can I add the 2x16GB to my empty slots? Will the computer utilize all 48GB or will it only use 32GB?

Most modern motherboards will see all 48, but will have a couple of caveats. You want to check your motherboard specs to see what it will support before you buy.

The 16GB sticks should reside in the primary channel, and the 8GB sticks in the second channel. You have to make sure that the sticks match in each channel, so check your motherboard specs to ensure you populate in the correct order.

The other issue you will see is that the memory will use the slowest speed among the memory sticks. Faster sticks will be dropped down to the slowest common speed. This is why it is often recommended to ensure you are buying identical sticks.

How tall are these?  I need to find something under 35mm to do liquid cooling in my case.

This memory is about 54 mm from top to bottom including the connector. I have a Dan A4 case and I have to replace this memory with Corsair Vengeance LPX when I decided to do liquid cooling.

Yes. These work great with the new 3rd gen Thread Ripper CPU's. DDR4 3600 is actually the recommended memory type for those.
