I would not recommend using a resistor to control fan speed because your motherboard fan headers will not have accurate control of the fans and can lead to overheating problems and burned out fan headers, it is best to have the MoBo control them directly and fine tune them via software such as Asus AI Suite 3, or if you have them connected directly to your PSU get a fan controller instead.

You might want to calculate how many amps your fan load is and check whether that exceeds the output on the socket you are plugging into. Otherwise, it is a very simple cable splitter--nothing funky.

You need to check current draw of those fans. Generally you don't want to draw more than 1 A from a m/b header. Fan controllers may support more load per channel. Most likely you'll be fine.

It is actually for a 4-pin PWM fan. You can still plug 3-pin fans into it, there will just be an extra pin which doesn't plug into anything, and only two of the pins will actually fit into the fan plug. Your 3-pin fans will work fine, they just won't adjust their speeds to compensate for higher case temperatures.

Is it safe to connect three 120mm fans to the mb using this adapter?

That depends on your motherboard's specifications and the power of your fans. In the motherboard's user manual somewhere, it should list either a max power (W or mW) or max current (A or mA) for the fan connector. Additionally, your fans should have a rated power or current. In order to make sure it's within spec, simply add the current or power of the fans and compare it to the current or power your motherboard is rated for. To convert between current and power, use the following:

x Watts (power) = y Amps (current) * 12 Volts

Example problem, replace with your specs:
If you have 3 fans rated at 0.7W and a motherboard rated at 500mA, then the total power of your fans is 3*0.7W=2.1W and the power for which your motherboard is rated is 0.5A*12V=6W. Since 2.1W< 6W, then it would be safe to run these fans from the motherboard.
