I currently have two sticks of 1866 RAM. Will this mobo support two actual sticks of 1866? What does the 1866 (OC) mean??

The (OC) means it has an overclocking profile to take it up to 1866 safely.  The OC Genie will up it to 1866 when you turn it on.  W/o OC Genie on you will likely run at 1600.

For reference I am using 2400 RAM which runs at 1600 w/o OC Genie on and 2400 with it on.

My RAM has some tall heatsinks on them... Will the Cooler Master EVO CPU cooler fit on this motherboard without intfering with my RAM? I only have 2 DIMMs so if I have to put them in the black channel that is fine.

Yes that cooler should be able to fit without moving your RAM. I have the same motherboard while using Cooler Master EVO 212 Plus and it fits - granted it is a tight one. you should be just fine, however, be careful.

Does this board have a button to turn it on without a case?

No. But like any motherboard you can easily turn it on by plugging a button on to,or shorting the 2-pin power header.

I just went through the BIOS on mine and I don't see anything regarding that, so the most you could do is a software RAID.

Actually it has 2.0 headers and a 3.0 header on board.  Spec total is 10x USB 3.0 and 8x USB 2.0

From the MSI website: 12 in. x 9.6 in. (30.5 cm x 24.4 cm) ATX Form Factor.
I measured 12 in. x 9 in. edge to edge on the board but a GTI560Ti Gfx card plugged into it measures 9.6 in.
