Is there any software to control the lights and fans instead of a remote ?

I'm not aware of any. The best bet would be to check Apevias' website.

would it be possible to hook up the fans to a with out a computer, straight hook up to a power supply ?

It shouldn't be any different then hooking up case fans to a PC where you connect directly to the power supply. In theory it should work, but be prepared for negative consequences if it doesn't.
