Will this be compatible if I pair them next to an old Patriot kit? I made the mistake of mixing brands once before, and I don't want to waste more time or money. I currently am using Patriot Gamer 2 Series 8GB (2 x 4GB) DDR3.

what is important is the speed of your ram vs. the new one you want to buy. they have to be compatible with your mother boards speed. if the viper 3 runs faster than your viper 2 they will run at a lower speed. you might to contact your mother board seller and ask for their tech support. 
you could go online and look up both to see and compare the differences and whether viper 3 will work for you.

Question 2

My motherboard supports 1333 and 1600, and 1866 in overclocking. Will there be weird issues if I use 1866 ram? Like even if I underclock it to 1600 will the different timing cause weird issues?

That depends on your motherboard, not the memory module.  You indicate that your motherboard supports 1866 speed memory in overclocking.  That doesn't mean that the motherboard will run this memory at its advertised speed and timings without some work on your part: you will likely have to go into the bios to enable "xmp": extreme memory profile.  PCgamer has a nice article on how that works.  Search on pcgamer and What are XMP profiles and how do I use them?.  Your motherboard manual should also provide some information on how to use the overclocking features on your motherboard.  This is very good memory for overclocking.  The low stock voltage rating of 1.5V makes it very compatible with a wide range of motherboards that would otherwise balk at a higher voltage memory module.  You should also use the command line command: wmic MEMORYCHIP get BankLabel, DeviceLocator, MemoryType, TypeDetail, Capacity, Speed       to show the speed and other details of your installed memory.   Since your paying for it, you may as well get the most out of your system's memory.

i get 4 of these would these be good for 64gb?

4 of them would be 32 gb they are 8 gb sticks and if your thinking 4 pairs you may wanna check ur mobo cause most only have room for 2 pair (4 sticks)

Is the black heat shield made of plastic? It feels like plastic on mine, but if it is plastic, then how does it spread heat or work as a heat sink? Thank you for your time.

no it is metal the heat sink would be way less effective if made of plastic...

Yes, I'm using this with an AMD FX 8320 8-core processor on an Asus M5A99X Evo R2.0 motherboard. Great premium RAM from what I can tell.
