What radius does it cover as a wireless access point?

I'm not for certain, I would be a proper authority for answering your question.

So, I use my setup to get wireless and/or wired internet access between my primary internet access router/modem and a secondary access point, in my other building.

In my particular setup, I have both of the devices pointed directly inline with one another at a distance of 98 meters. My intention was that, I DID NOT want to run a LAN/Ethernet cable between two buildings for internet access.

Another way of answering this question, is that; I believe these are designed too be "Wireless Antenna" but not necessarily "Wireless Area Coverage" devices.

I'm sorry that I could not be more specific about you question of radius.

Ubiquiti UBI-NSM2US NanoStation M?

Not really familiar with the Ubiquiti product but looking at the specs it seems to be designed for the same applications as the TP-Link and has the same features.  So I'd say yes, in virtually all applications it would be fully compatible.  
Both manufacturers do offer some special modes that you can opt to enable that in some cases supposedly will improve throughput between other units of the same brand in point-to-point applications, those modes might not be available if you are linking different brands, but their use is optional anyway.

Is this thing a substitute for a wifi range extender? How does it work? I wan to provide wireless coverage to a shed that is about 200 ft from the router and I cannot run a cable. Will it work with any router or just one from TP-LINK?

should work from any router, but to do what you are wanting you will need two.  This is how I used it, connect NON-TPlink router to the first one created a network between the two devices then connect a wireless Access Point on the other end.  This work flawless.  These are line of sight so if you have anything in the way it may affect it.  Speed was great.  I will use them again.
