Are the antennas removable?

Yes the antennas are removable, just unscrew them in rear. The unit is Rock Solid. I have not had to re-boot it in over a year. Highly recommend this router.

Does this Router broadcast a 2.4GHz and 5GHz network simultaneously? Or do you have to choose one or the other?

I owned an earlier version & both bands are available & can be connected simultaneously.
The current version, I should not speak for because, unfortunately, TP-Link has discontinued  support of open source software, so I am returning it.

NJ - The hardware is V1.  Even on the support website the only version that is listed is V1 as of early June 2016.

What wireless adapter is most compatible with the TP-Link AC2600 router?

Do you mean what brand, type, model, standard? 
There should be no difference between all modern day ones.

Does anybody know what version of the router this is shipping with currently? I plan to put OpenWRT on this and it appears (according to OpenWRT's device page on the wiki) that only the v1 of this router is supported.  Or if someone has a newer version of the router and got OpenWRT to work well on this I would like to know.

Yes, the current shipping version (v1.1) does accept OpenWRT.  The Arokh build is pre-configured to be about 90% functional, in my opinion.  I was unable to get VPN passthrough working, so I went back to stock firmware.  Heinz' Lede build is considered to be closer to fully functional and configurable, but you need to be familiar with package install/config.  If you are up for this, then the result is a fantastic piece of hardware with matching functionality in the firmware.

can I use this as a DSL modem and router on AT&T Uvese as a replacement for the on supplied by AT&T???

Unequivocally no.  This is a router.  A modem is a different type of hardware.  While many carriers like ATT and TWC offer combo units, they often fail at doing one thing well and do both mediocre.

Check with ATT support to see if they allow aftermarket modems and if yes, what models are on their approved/supported list.  If not, you can still use this behind the ATT provided device, a privately owned router like this can often be more secure, more reliable, and easier to use than the provided device.  You'll probably again need to speak to their support to put their device into "bridge" mode to allow you to make full use of this router.

I'm looking to hook up 2 terabit or larger HDD for backup over the (home) network.  Can Some provide a list of hard drive enclosures that will work with this router?  I'm thinking of using Western Digital HDD.

I have used a 4TB WD My Book with my AC2600 and it worked well.  You can set it up to do DLNA with the unit which makes for an easy way to watch movies on smart TVs or other computer on your network.  The My Book was also used for backup by all of my home systems.
