Does this model have a dough-only setting where you can take the dough out before it bakes? Like for pizza crust etc.

In short: YES. There is a Pizza Dough setting that makes the dough in 45 minutes, then ready to flatten out and bake in your regular oven with sauce, cheese, and toppings. Also, for all of the other bread modes, you can select "Dough Only" and it makes just the dough. I recommend downloading the manual (it's a PDF file easily found on the net) for "deeper" questions. Also make note that all references to "flour" should be "bread flour" - - there is a difference. But, overall... this is the best bread maker that I have ever used (so, highly recommend).

capacity, size, how many lbs?

The recipes call for 3-4 1/2 cups of flour. I make the smallest size (3 cups) which makes a nice size loaf. Also, I make a lot of whole wheat, rye, and pumpernickel breads, and have had no problems with the machine at all. That was my biggest concern.
