is this item just a pc case with cooling and a motherboard, so all you have to do is install ram, CPU and GPU?

Correct - Case + Power supply + motherboard, cpu cooler included.
You need - GPU, CPU, HDD

For the M2 drive slot - you'll need to unmounts/remount the motherboard.
From Corsair on GPU - "Recommended Graphics Cards: CORSAIR Hydro GFX, AMD Radeon R9 Fury X, MSI Sea Hawk, any card equipped with CORSAIR HG10 bracket and Hydro Series H55 cooler"

Can this case be stood up on its edge?

I just tried to stand mine up (its an empty case now, does not have all the components inside), but no, it does not balance. The sides are not flat so it is not meant to be stood up.

Yes it does, you can do 1 SSD drive and one standard HDD

The GA-Z170N-WIFI Motherboard has 2, DDR4 DIMM Sockets installed on it. This allows up 32GB of system memory. This Motherboard also features XMP mode. (Extreme Memory Profile)

I see it says multiple HDMI ports so how many 4K monitors can I run at the same time?

Assuming you only plan to only use onboard Intel graphics, only one via DVI. The HDMI ports only support up to 1080p. ( Technically they can do 4k@30hz but this isn't really an acceptable option for most applications )

What Processor, memory, HD, and Videocard would you suggest for this?

I would recommend the Intel i5 6th gen processor with DDR4 memory that is a lower profile since the CPU heat sink is right above the memory and CPU.  I would also suggest any SSD hard drive as the computer boots super fast with SSD. And because of the placement of the video card in the case and the use of foam blocks I would get a video card that had space in either the middle of the card or at both ends. Video cards with three fans would be tough to get installed.

Can you use all 6 of the SATA ports on the motherboard?

There is only room for 1 SSD and 1 HDD so I don't know what else you would use them all for with this setup.

Corsair claims that AMD or Intel can be installed, however, there seems to be no option to choose with this purchase. How do you choose to add the AMD mobo?

This one comes with the Gigabyte board, so you can't choose unless you decide to buy another motherboard and remove the one this comes with.

Does it automatically come with a riser, or do I have to buy one?

It comes with a bendable PCI Express attachment so you can hook the video card up to the motherboard with ease. Worked quite well for me.

What comes with this kit? The description says barebones, but the images have graphics cards and storage in it.

Slight correction from the previous answer. It comes with the motherboard, power supply, and cpu cooler. You will need to add memory, gpu, hard drive, and cpu.
