Is this a full Height card or half-Height?

Full height. It takes up a normal slot as seen from the outside of the case.

Is this cable only capable of 3gb/s or will it do 6gb/s if connected to a SATA III port on the motherboard?

I have seen other cable brackets with the same wire gauge rated at 6Gb/s but don't think it's going to matter much. Unless you have every component in your computer and external drives rated SATA III and it all can function at that speed, you are going to probably get speeds slower than 3Gb/s. After my own experience and reading testing, a sustained rate of 80 to 200 MB/s for large files is probably more normal. (I do video files mostly) You can have burst speeds way higher than this but when the memory fills on your computer and drives the sustained rate becomes way less

What is the data transfer speed of this cable?

It's a SATA2 cable, so the speed should be 3 Gbps (300MBps).  I can't speak to whether or not it actually achieves SATA3 speeds or now, however.

Can these be connected to a 7 pin 6G/S SATA hole on the board?

this adapter has  both eSATA and SATA connections
The cable end is standard SATA same plug design used for connecting Hard Drives CD\DVD drives to a PC.
The external end is a eSATA connector that allows better data transfer at a higher rate up to 6 gig  using external cables up to 6ft long  you must use ESATA cables externaly they are not the same as internal cables.
