So this device functions as both a modem and a wireless router? Right now I have 1 modem and 1 router and I am looking for something that can do both of those things so that I have one less device to plug in.

No, it just creates a wireless access point. it connects to your verizon modem via coax.. it then becomes a 2nd access point in your home.
My fios router is in the basement of my home, I was getting dead spots on my first floor, unhooked the coax on my TV used the supplied splitter and reconnected one end to TV the other to the network adapter.  It found my home network and joined with no issuesnow I have a wireless access point on my 1st floor eliminatung my dead spots... Works well no issues to date. As info it also has to RJ45 ports on it so you can also hard wire 2 devices to it..
As for using only one device in your home the modem/router supplied by verizon is one unit.

Hello,  Do you know if I can hook up multiple units throughout my house. I have 5 floors and the Main Fios Gateway only covers two.  Would love to hook up 3 of these? Thanks.

Yes, you can, but start small to see if you still have low Wi-Fi signal areas. Another options will be MOCA ECB2500C adapters usage for the wired Ethernet connection.
