Question 1

If I upgrade to Windows 10 on this, will I not be able return this if need be? The return policy states if the original OS is erased it is non returnable. Will it erase Windows 8.1 with the upgrade?

Updating to Windows 10 is optional, and it does not erase Windows 8.1.  You can revert back to Windows 8.1 at any time. If you are still worried you can create an image of your hard drive/SSD with Norton Ghost. Then if you have a problem, you can just restore the image with Windows 8.1 on it and it will be as if nothing ever changed.

PS you will need an external drive to store the Ghost Image on. Also, you only need to do it on the drive that the OS is installed on.

This has a G-Sync enabled display? I know the GTX980m supports its but without the display it is an unused feature?

the description is a little bit missleading, but if it says g-sync technology in it then it comes with a g-sync display. thisnparticular one comesmwithna g-sync monitor!

Question 3

I have read somewhere that if you don't get the SSD when you buy it, you can't put one in later. Do they all have the m.2 slots regardless if you order it filled? If so, is it easy to get one later and put the OS on it? (I'm only moderately computer literate)

All Asus Rog G751 series all have two  hard drive or Solid State Drive slots. You can replace both of them with SSD or have two HDD

What size are the RAM sticks inside for the 24GB? 1 8GB and 1 16GB?

3x 8GB.  You can add an additional 8GB stick to MAX out the total RAM at 32 GB

Will this Laptop fit a docking station? and if so which one? I'd like to use it at a desk like a desk top, but have the ability to take it with to work out of the office when need be.

I would not recommend using a docking station.  The back of the machine sticks out quite a ways (approx. 2 inches) from the screen and is also where the exhaust vents for the cooling system are located.  Additionally, I have been unable to find a location to hook a docking station up to on this machine.
