Can I replace the HDD with an SSD and add memory?

If you want to take a computer and make any modifications this is probably not the computer to do it with. There are only two ram slot and both will have a max capacity which you can look up but I would be shocked if you could put 2 8 gig sticks = 16 gig of ram. It is for all mechanical purposes a laptop, So disassembling and reassembling it can be a delicate process and if his is your first time you will most likely brake a lot of the plastic clips making the computer impossible to reassemble. Another frustrating issue is the 3.0 use ports. I'm not sure if the HDD you installing is already configured but if it isn't then it's impossible to get drivers on the computer because the mouse and keyboard are 3.0 and stop working when the computer boots meaning, even if you put the drivers on a disk you cant click on the file to instal hem. Shot Answer NO NO NO. Hope this helps!!!

How do I open the back of the AZC 606 to install a larger RAM chip?

There wasn't a warranty unless with the computer, you can purchase that through Newegg separately and there isn't a HDMI port so you cant connect it to another screen

Can I set up a 2nd monitor for this all in one if I want to utilize dual monitors. Also does this come in a touch monitor?

Not sure about the dual monitor setup but I'm sure if you have the proper splitter it shouldn't be to difficult. This model does not come with touchscreen but I have seen other models that are touch.
