How is the quality of the keyboard?

The keyboard is fine, it has a short travel, sort of like on a laptop. 
The mouse works fine, but has a loud (low sounding) click, so if your co-worker is playing a game, you hear constant clicking. 
The computer drives a 4K monitor nicely, we don't use it for games so cannot comment on that, but it's great for what we use it on.

Does it come with a keyboard?

Yea it's a small one. The mouse is pretty bad too it shines red all around since the laser isn't well contained. 
The video card is not bad but it does only come with one fan.....and there is only room for one more fan....Still it's pretty quite and the wireless card works well.

Are all of the parts upgradable?

I would be willing to bet they are. The case is typical, though tight for cables in places. Overall, this is an excellent base machine to expand with - add another 8gb ram and an SSD and sit back and admire. video card is average but supports 4 monitors as is. 7th gen i5, even has a charge platform for wireless charging, M2 expansion and usb 3.1 c type on the front! Great price right now too.

Is the hard drive removable.  Will I be able to upgrade to a SSD?

I just purchased the Acer Apsire GX-785-UR16 and I added a samsung 850 ssd as my primary drive You could remove the 1 TB hard drive but I kept it. I put an alternative OS on the ssd (Linux Mint 18.2). and removed win 10 from the 1 TB HD. It now is used for data. The computer is running very well this way. It will be difficult to plug in the sata data cable but it can be done. I hope this helps you. The computer boots up very fast with he ssd.

Yes. I did so on mine. In Settings > Display you will be able to configure the monitors.

whats the max amount of ram for this desktop?

64 GB. There are 4 memory slots. One is populated with an 8 gb chip. The memory for the UR-16 model is DDR4-2133/PC4-17000.  By the way there is no VGA port so if you plan to use multiple monitors you will need a display port cable or adapter in addition to HDMI.

Can it fit a GTX 1080 Ti in the mother board GPU slot?

8 Gig 1 stick of DDR4, I'm sure its some generic brand, i couldn't really find any info on it.
