Does this come with the DVI-I Dual monitor cable?

You can see it is included in one of the pictures, but I think is Single Link DVI-D. With Single Link you are ok since the monitor's maximun resolution 1920x1080@60Hz which is within the cable limitations, Dual Link means it supports higher resolutions.
 DVI-D means it only carries digital signal while DVI-I means it carries both analog and digital signal. Keep in mind this monitor has a DVI-D connector, so you can only put digital signal in it.

Has anyone had trouble with color?  Just got the monitor yesterday and have had a terrible time getting the display to actually look nice.  It's just a bright annoyance that gives me a headache

I have some issues with bright yellows, they display 'funky', nothing extreme and it is rarely an issue, but it doesn't happen with any of my other monitors.

The fine print on the adapter reads:

Input: 100-240V - 50/60HZ
Output: 19 V (diagram) 1.58 A (diagram)

That's only mention of voltage i see on the adapter module.

Short answer is NO. 
Long answer is the universal mounts need 4 evenly spaced screw holes that conform to VESA standards for monitor mounts. This monitor does not have VESA standard mounting holes.

1920 x 1080 is a 16:9 ratio resolution. You can check by dividing 1920 by 16 and 1080 by 9 and if they both give you the same number (in this case, 120) therefore it's 16:9 ratio.
