how does this item heat up and how long will it stay hot. i just need it to keep food warm?

It stays hot for a long time. Heats up pretty quickly too. Its really good for the price and should get the job done for whatever youre doing. But obviously as you go into higher price ranges the quality gets better. I really like mine though

can I use any kind of pot or pan on it?

Yes, this is not an induction cooktop, so aluminum, ceramic, and Pyrex glass will work along with steel, copper and iron.
