Is this a modem and router? 
Than anyone have experience with using a coax adapter for this?

This is just a Router, usually, your internet provider will supply the modem which will have an Ethernet output that will connect to this router.  In my area, my Cable provider supplies the cable modem for free with the service,  however, they charge a monthly fee if you want to use a router from them.

It is NOT a modem nor is there any coax cable connectors in this device ... I will say, so far, it has appeared to be a rather excellent router with very good flexibility.

is this good for just using it with one thing, with an Ethernet cable?

If you are not relying on Wifi, and only have 1 device, this is a bit over-kill, You can find other gigbit routers that will do just fine for half the price.

Does this support multiple tvs hooked up to it?

It should. you'll have 4 ethernet ports to plug into. And WIFI will be great for if connecting wirelessly. If you log into the modem and access the advanced features you can enable QoS and fine tune your internet traffic to prioritize devices on your network.
