According to CanYouRunIt (running on the laptop in question), it can run both. Meets the recommended specs for Overwatch, but  only meets the minimum specs for Apex. But you should be able to run both without any issues.

How easy is it to swap out the HDD?

Migrating the OS is fairly simple and was done in about 2 hours. I didn't replace the HHD, I added a m.2 SSD and then moved over everything, switched the boot option in the bios, and it was done. You have to make sure you get the m.2 SSD that is compatible with the motherboard, I believe it should have 2 pins.

How do you get the Gears of War and AoE? I have no download code/voucher, and it is not pre-installed.

I have no idea.  I was wondering that myself, I can only assume that ASUS knew that the FX504 could barely handle running Fortnite, let alone GoW and decided to not actually give out the codes for the games.

Can you run VR smooth? specifically Oculus rift

The Rift's compatibility check tool tells me that the 1050Ti that it comes with doesn't meet the recommended specs. But it should  be able to run VR, maybe with some lagging or something, I haven't tried it myself.

What is ram speed and cas latency of the onboard chip? Is it one dimm, or two?

the speed of the ram is marked as 2666Hz and seeing as its 8GB its safe to say its one stick, but motherboard supports up to 32GB so it should have 2 DIMM slots each supporting up to 16GB

an SSHD is what's called a hybrid drive it's a logical or physical storage device that combines a faster storage medium such as solid-state drive (SSD) with a higher-capacity hard disk drive (HDD). The intent is adding some of the speed of SSDs to the cost-effective storage capacity of traditional HDDs. The purpose of the SSD in a hybrid drive is to act as a cache for the data stored on the HDD, improving the overall performance by keeping copies of the most frequently used data on the faster SSD overall its about 4- 6 times faster then a normal HHD but not as fast as a full SSD its a happy medium a good bang for buck solution
