How much room is available for a GPU. Would a GTX 760 fit?

Hi, I don't give you an exact number but without hard drives installed you will have enough room easy. If hard drive are installed you should have no issues as well unless it's an uber-long card. which the 760 is not.

Will it fit a corsair H100i?

It all depends on the space your motherboard provides, but yes it will fit and screw into the top 2 vents.

Would I be able to use liquid cooling with this case at all? What is the biggest size radiator this case can accommodate?

The Shinobi will supports watercooling, but you have to plan carefully your parts selection. On the other hand, the Shinobi XL is much more watercooling friendly. It offers the flexibility to outfit it with a large variety of watercooling setups. It supports a triple radiator on top, a triple radiator in front, or a dual radiator on the bottom out of the box, making it an ideal chassis for the watercooling enthusiast.

I'm building a PC that may have two storage drives to start with, and a possibility of expanding that to four or five down the line (two SSD, two RAID 0 arrays, and a 3TB HDD [or a similar configuration]).

I'm wondering if this case will be large enough for all that, or should I just spring for the full tower version?

A full tower with side mounted drive bay drives would work great.  given all the cables and it would wind up being no room or worse breaking something... Prying the video cards apart on the motherboard.  ANTEC 900 case buyers beware.  I got the IN WIN full tower and it works great.

Will it fit a cosair H100i?

This is not the case you want if you wish to install an H100i. I suggest you consider a 500R instead.
