Could you use this to host game servers games like MineCraft?

This is a case only. You still need to supply a motherboard, RAM, 2.5" hard drive or SSD, and CPU. Any of the AMD APUs and mini-ITX boards would be a good fit.

I'm considering building an HTPC with this case and the following specs. Do you guys think it will work?  I'm mostly concerned about power consumption. I don't mind adding a fan or drilling vent holes.
ASRock H81M-ITX LGA 1150
Intel Core i3-4130 54W
4GB DDR3 RAM
2.5" drive (non-SSD)

I wouldn't do it .Your instincts are spot-on , you will not have the power.
