1) Is it chat-only headset or all the sounds go through it? (like if I want my TV to be quiet) 2) Do I have to have a wire coming from the console all across the room or just from the controller add-on?

All sounds (game & chat) go through the headset with separate volume controls for each. So you can mute the tv and use the headset only. The only wire is from the controller to the headset.

can the xbox one stereo headset be used with the xbox 360?

No, Xbox One has a different input jack 3.5mm similar to that of a cellphone ear bud with mic. The 360 use a small 2.5 mm. If you buy the standalone adapter, it comes with 2.5mm to 3.5mm adapter to enable a stereo Xbox 360 wired headset to work with Xbox One.
