Carnival owns Princess. Can I use this card on a Princess cruise?

No, they can only be used on a Carnival cruise. Princess is owned by Carnival Corporation, which owns a lot of different cruise lines like Holland America, Princess, Seabourn, etc. You cannot use Carnival Cruise gift cards on any non-Carnival cruises.

Why don't you do other amounts of carnival gift cards and why is there a limit saying 5 in with the code but you only allow us to buy 1?

There are other amounts to purchase outright but if there is a special code for a discount it is only on the $500 level card. They need to limit the purchase number for each buyer as they are sold out very quickly in most cases.
