NAND and Dram are different, do not believe this specific SSD has a DRAM chip, only a NAND one.

Will this work in a dell optiplex 7010 and do i need to buy any SATA cables for this or could i just use the ones from my PSU?

A lot depends on what size drive is already in the optiplex 7010. The original specs say that you have 
Hard Drive
Interface Type    SATA 6Gb/s
Spindle Speed    7200 rpm
Type    HDD
Interface Class    Serial ATA
Installed Qty    1
Capacity    250 GB

So the original is already a SATA interface so you should not have any issues with the PSU connection or the SATA interface to the motherboard. 
I know the 7010 is a SFF box but I am not sure if the HDD is a 3.5 or a 2.5 size. If anything if the original is a 3.5" you may need an adapter tray (2.5 Inch to 3.5 Inch Bay Drive Converter Kit)to secure the new BX500 in place.
My final comment is the size of the SSD. It will be faster but the one quoted is half the size of your original. You should be looking for the BX500 in the 240GB or larger size.

Yes. I have an optiplex 7010 as well and you can use the SATA cable from the PSU
