The 12-inch pan provides a 10-inch cooking surface and is constructed from 99% iron and 1% carbon. Carbon steel heats quickly and distributes heat efficiently, while proper seasoning allows the cooking surface to progressively develop natural nonstick properties.
A protective beeswax finish helps protect the carbon steel before seasoning, while the durable epoxy-coated steel handle is securely riveted to the pan. The pan is compatible with gas, electric and induction cooking surfaces.
