Will this fit in a mini tower pc?

The card ships with the standard height adapter plate installed.  It does include the shorter plate and it is easily installed by unscrewing the two screws shown in the picture on either side of the DVI connector.  So the answer is yes if you don't mind about a minute of work with a pair of pliers or nut driver.

I own one of these but how exactly can you crossfire it with another?

you should be able to just plug the second one in but i would google it because as far as i know you dont need a crossfire bridge

Does this card work work with only a single monitor?

Yes I have used it with a single and twins.  Good card.  I don't use it for games, its my work system.
