Should work just fine. I have used SanDisk X400 SD8SN8U-256-1012 in these and they work great as SATA 3 drives. Make sure to check EnLabs info for fitment.

whyare there no 2280 PCIe M.2 NVMe SSD adapers out there?

NVMe can't communicate through a SATA connection. You'd have to get a PCI adapter card, not one with a sata connection
