Question 1

I would like to order this access point along with external high gain antennas for maximum range.

Do I need to order two antennas ?
Do I need to space them accordingly ?
why do they put 2 antennas on the box ? one for transmit, one for receive ??

Ordering 1 or 2 antennas will depend on your needs.  1 Omni antenna on the access point may be fine if the omni pattern, basically a big donut, will see the signals from the client bridge or clients.  We have used a single patch antenna on the access point here because our needs are very directional.

My knowledge on fresnel separation and spacing requirements is limited but if both or all antennas are on the same channel the spacing may not matter. ( see next comment)

Thinking back on high school physics 4 decades ago the 2 antennas are likely for the purpose of making the omni pattern take on a directional bias perpendicular to the 2 antennas.  The shape would become more like a football than a basketball.

roughly what is the wifi range of effectivness (in feet)?
500,750,1000,2000???

Honestly it depends on the area you are broadcasting. If there are a lot of trees or hills the range is not very good. I have installed two of these systems and one is in an open area near a lake and broadcasts about 2000ft. The other area is wooded and I get around 750ft. The farther you go and higher the output setting you use the less reliable the connection between the AP and client. If it is possible and you are going a great distance I recommend adding an AP as a repeater between your main AP and the client to keep the output strength settings as low as possible for reliability and connectivity.

I am planning to purchase one of these routers for my 50 unit solid concrete hotel. Will it be capable to handle around 300 devices at high speed  at a time?

Not really sure about that.  I would contact the Engenius tech support and ask them.  You are more likely to be limited by the bandwidth you are getting from your internet provider.  Even a 150 Mbps business class internet service would only be .5 Mbps per device if all were being used at the same time.  Still 10 times the speed of dial up, but not really high speed.

That being said, this is a good device.  We use several of them in a condominium setting.  The signal range can be expanded by getting two external panel antennas and spreading them out from the unit using RG8 coax cable with N-type connectors. We place the antennas in the attic aiming down about 50 ft. apart.

how can i reset this unit?

There is a reset menu on the right side, near the home button, that is available after login.  It has a reset the unit option, which appears to be a reboot, and a factory reset which wipes the unit back to factory base config.  Hope this helps.

It says the lan2 port can be used for an IP camera. Is it a POE port? Also, will upgrading the antennas to something like the EAG2048 significantly improve the range, and, should they be mounted in place of the stock antennas or connected to pigtails and spaced differently?

Have not had a requirement to use the LAN2 port so cannot answer with any technical accuracy on the details.  Logic would say it likely is POE.  Upgrading the antennas can help in some cases.  The stock antennas are very good and since they are already omnis going to an 8 dB accessory omni may not in itself improve things unless it is a matter of mounting arrangement.  If the accessory is mounted on a pole to keep access to the ENH210EXT practical then the antenna is justified.  Patch antennas, on direct line of sight, may make a much greater improvement over stock antennas depending on where the devices are that must talk to each other.  Antenna cables and surge suppression are 2 technical details that also may need attention.
