What is the key difference between this model (F4-3200C14D-16GTZR) and the F4-3200C16D-16GTZR? I'm a bit new at this; thanks!

The first kit you mentioned is a CAS 14 kit, and the second a CAS 16 kit...the lower the latency the better/faster (i.e. "14D" vs. "16D"). If the price difference isn't too great, I would definitely go with the CAS 14 kit...

If you're looking to use Trident Z RGB on the AMD X370 chipset motherboards and Ryzen 7 series CPU, then you can consider one of the following:

F4-2400C15D-16GTZR
F4-2400C15Q-32GTZR
F4-3200C14D-16GTZR

G.Skill also recently announced a line launching in October that is specifically for AMD Threadripper and Ryzen. All we know right now are the timing but they will likely use a Samsung B die.

Not all Trident Z RGB kits have a Samsung B die. Here are all the G.Skill Trident Z RGB that should have one.

There will be g skill RGB control software soon if you don't have an Asus Aura ready motherboard. The RGB automatically cycles through the colors flowing from left to right. The transparent material on top that shrouds the lights is plastic.
