I need some help with my next steps.
I have a Ryzen 7 3800x
Rtx 5060Ti 8gb
16gb ddr4 3200
600 watt power supply
I’m looking for what I should upgrade next, I like playing more cpu based games and price isn’t a worry. I’m just looking for the smartest next decision.

At this point I’d probably just max out the AM4 system and go with a 5800X3D (they just Re-issued it) .For CPU-heavy games, that’s about the best gaming upgrade you can make without replacing the motherboard and RAM too. It’s fairly expensive and not the most cost-effective CPU but it would be the fastest gaming CPU for AM4 And for someone coming form a 3000 series It’s probably the right move.
I’d check your exact motherboard first though for compatibility, because you may need a BIOS update and some lower-end AM4 boards may not be ideal for a 5800X3D.
Your 600W PSU should be fine with that setup assuming it’s a decent-quality unit. After the CPU, I’d maybe look at going to 32GB RAM if prices are reasonable, but I’d do the CPU first.
I agree with @Viraco 5800X3D is the king of AMD AM4 for gaming & if you get it from Newegg it comes with a free Cooler Master 240 AIO If your on a budget go with the 5800XT which is the budget king at around $220
