Would this work well as a video streaming box? I want to have a dedicated Plex machine for streaming at home.

Yes.  I think this should work well for that.  I had purchased a lower power Intel Atom based server that struggled a bit but this is much more powerful.  A very nice box.  If you get and external USB 3.0 drive, I have found that the WD drives seem to perform better than they Seagate in my experience.

If I want to use the M.2 SSD (2280) slot for memory, do I need to give up the Dual Band Wi-Fi & Bluetooth 4.2 NGFF M.2 card ?

No, the wireless card comes pre-installed in its own slot, leaving the M.2 2280 slot open for your SSD.

is this cpu/board compatible with windows7?

Yes. But device drivers are available only for Windows 10.

Would a disk player fit in it? how customizable is  it? can a normal sized processor, fan, storage, and memory parts still fit?

No... there is no room inside for anything other than a 2.5 inch disk and 2 laptop memory cards.  Very compact.  I used a external cd/dvd rom drive that was usb and sat on top of this machine for a media center.

No option for it in the latest F5 version of the BIOS.
