Q: would this be able to run minecraft and/or a minecraft server with <10 people?

I am a minecraft newb. I only have it setup for my kids and it seems like it works OK but based on the time it takes to go through world setup, I could only guess maybe? That is purely a guess tho. Go look at CPU boss for a comparison against other processors. What is required of a Minecraft server after world setup? With quad cores and a Celeron marchitecture the performance is pretty darn good I must say. I have a firewall using this proc and it is great.

Windows 7, 8.x and 10. Various flavors of Linux with some tweaking.

I installed a single stick of DDR3L memory with a 60GB SSD and it boots in about 10 seconds. It's not a power house but it does browse the Web and works well with the office apps I had to get installed for a job.

Anyone successfully running Windows 10?  Mine works great with Win 10 Home, except that it hangs at the Gigabyte screen during restart about half the time.  It cold boots perfectly, but won't restart reliably.  Has anyone seen this issue?  Gigabyte says they can't duplicate it, but I've read other complaints about it on forums.  Any solutions?

BTW, in case you haven't figured it out, there is a BIOS setting to select Win 7 or Win 8.  To upgrade from Win 7 to 10, you'll start the process normally, but at some point the PC will hang during a reboot.  Power it off, then power up and go directly to the BIOS.  Change the setting from Win 7 to Win 8, and restart.  Win 10 will finish installing, and all is well.  I've never seen a setting like this on other PC's, but I know if you change it back to Win 7 and try to boot a good Win 10 installation, it will hang.

Question 3

Just received unit, but I get no video signals.  Installed new Crucial 8 GB DDR3 1600 SO-DIMM CT102464BF160B (also from newegg) and working OCZ 120 GB SSD.  I get no video signal from either VGA or HDMI.  The blue light on the power button blinks briefly, then stays on, but still no video signal.  I can't find any troubleshooting info from Gigabyte.  What should I do?

This unit will only run on DDR3L memory, 1.35v.  Try swapping out the Memory with a different stick,  also if you go to Gigabits web site, they do have a confirmed list of memory that works with this unit.

Will this work with Ubuntu OS? Will the wi-fi work out of the box with Ubuntu?

Awesome Wiley! Here is my dilemma - I got an Intel NUC and tried installing Ubuntu 14.04 LTS on it and it wont recognize the Wi-Fi. Even after installing Ubuntu without an internet connection, I was not able to have it access the Wi-Fi card successfully. It was very frustrating. I just want to make sure that this will have Wi-Fi working right out of the box? Could you please confirm?

I would not advise it. I can play some 1080p home videos but even very resource efficient video players cannot let you use the filters in the player because the video goes out of sync with the sound. 720P I have not problem and can use video player filters (slightly)
