It comes with an adapter to the 12-pin format that the card needs. You will need to supply it with your own 4 x 8-pin.

Surprisingly not, the cooler is massive and doesn't get hot enough to cook food.  My old 1080 though, that is another story...

Look at the box. It will say somewhere that it's 1.0 or 1.1. But it should be 1.1 since you bought it recently.

Has gigabyte fixed the issue with the "Weak" PCIE when connecting to the motherboard?

I wasn't able to use the anti-sag bracket.  GPU wouldn't make a good enough connection to the mother board. Runs like a champ. Easily runs a 55in LG UHD on ultra settings.

How much clearance is needed above the card (towards the front of the case in a traditional case configuration) to clear the four-to-one adapter cable.  Or, how much space is needed to safely bend the adapter cable  90 degrees?

For this card you will definitely want a full tower case. I am using a Thermaltake View for example which does not have any of the old-style built-in drive bays in the front of the case. You don't want to bend the adapter cable 90 degrees. You want a nice wide arc or plan to buy an aftermarket cable say from cablemod if you need something with a tighter angle. They have a slick looking adapter to create a tight angle for you. I think the biggest obstacle I had was getting that mouting bracket to cooperate
