Since stainless steel is not ferromagnetic, how does the included pan even work? Some sort of cast iron insert? Or is it not truly stainless?

I'm not sure about your statement that stainless steel not being ferrous. Stainless is made of Iron, nickel and chromium; the percentage of iron would determine the ferrous quility.
Re: this particular pan that was included with the Tatung induction cook top; it has worked well as have other stainless pots that I have used. Some of the Stainless pots I've used are not thick enough to imbed an iron disc.

The surface that contacts the cooker has to be iron or stainless steel. Works great with all cast iron and some stainless steel.  Need to check how the stainless steel cookware is made.  Some are sandwiched with cooper or aluminum that prevent it from working with induction cooker.

Is this the cooking surface that is cool when touched even while cooking?

Yes, the cooking surface does stay cool unless it is in contact with the magnetic based bottom of the pot. The base will absorb some of the heat from the substance being heated in the pot and will after time, transfer some of that heat to the cooking surface below.

The unit lives up to the description - heats "stuff"up quickly and knows whether your using the correct cookware.  The unit is about 14 inches square and the pan is about the size of a 12 inch pan and about 5-6 inches deep.  It will "eat-up" some counter space, but can be stored like a book in a cabinet or flat and you can place other cookware on top.  The true test will be Thanksgiving, b/c we always run out of burners on our conventional stove and need a device to heat stuff up fast.

I bought this last September. Now it is not working. Is there any warranty come with it?

I don't know but I would guess it would be a standard 30 days. Make sure that you use only on Stainless Steel pots. Non magnetic material will not work. May be that is the problem, not the unit is defective.

I've bought a total of 4 of these little beauties, still using the original every day.  Other 3 went for gifts and all are super pleased.
Will probably pick up a few more as the price keeps coming down.

11 in. across the top, 7 in. deep, 4 in. across the bottom. Perfect for quick pasta, stews and soups for me. I love both and use them a lot. Fast cooking doesn't get any better. I forget about warranty because I've owned mine for years. I recently bought one for myhdaughter and she loves it. She keeps it in he RV.

We have not had any interference issues on any of our computers or any other electronic in our house .

how many temp settings on this model?

Roger B is correct about no feedback on what the actual temperature is. John R is correct about the different settings.
What my wife and I have noticed is the temperature varies significantly according to pan size and contents so we use a thermometer and get good results. We have also found that the heavy cast iron cookware works much better than stainless steel and it's also cheaper to buy.
