How does this install?

It all depends on what you are looking to do with it. It comes with the molex 3/ 4 pin power, and a peice of double sided tape that you can place anywhere on your case.

Personally i added it to some extra cables and used a cabel tie to have it light the bottom side of the GPU/case for ambient lighting for my friends system.

they are in a solid strip casing so ultimately it allows for cheap and assessible lighting for specific areas you wish to add onto.

They are also fairly bright so in a mid tower case, 2 at most will light your case without need to add more unless you never want to have to turn other lights on in your room and have a side window......

Question 2

Will just one of these light up an entire case?  Where, in the case, should it be mounted?

I dont think 1 will light up a case. Its more to highlight an area. I suggest gettting at least 2 of the bar style lights and mounting one at the top and bottom of your side window for the case. That way you cant see the bars and get good lighting. Then you could mount something like this one to add a little extra light above the gpu or something like that.
