is there a start date or does it start from when it is activated-could I buy them for Christmas and be good through Dec 25 2016 ?

There is no start and end date on these, they are just 12 months of time that is added to your XBL account when you use it.  One note to keep in mind is that Microsoft only allows you to stack 24 months of time per XBL account.  (Though the codes will not expire even if you buy more now)

I often buy up years of time at once when they are on sale.  On average you can find it for under $3/month on a good sale.
