If I use the M.2 port on this borad will it disable any of the six SATA Ports?

M.2 is just a form factor. It depends on the interface type. It will disable 1-2 ports if the m.2 has a SATA interface. If it is NVMe it shouldn't disable since it is interfacing with the PCIe lanes directly.

What BIOS version will this ship with? I would be getting a 9th Gen i5, and I see it requires a certain version for 9th gen. I do not have an 8th gen processor to update the BIOS with.

Unfortunately you will need an 8th gen CPU to update the BIOS. Mine shipped with only the 8th gen compatible BIOS. You could always ask the manufacturer to update the BIOS, but you would have to send it in for that.

Recommended power supply?

Hello Ezra, You will need to first figure out the power requirements of the system you are trying to put together. The board sort of acts as a passthrough or "bridge" to supply power from the PSU to components that require external power to operate (like the CPU or graphics card). You could look up power calculators online that will help determine how much power on average the system will use based on the specs you provide, I usually recommend at least a 500W unit to start and go up from there based on your needs.
