Does it include the hold down bracket needed to add a 2.5" SSD? If not, where can I get one?

Yes, the bracket is included. I will have to get the manual on this unit because it seems like you will have to take the whole back base in order to  install the SSD. There is no small compartment to access just the HHD and memory like the Lenovo PCs.

Does this come with one 16GB memory stick or two 8GB memory sticks installed?

8 x 2 dual channel.  The single stick reference applies to the MSI's that have only 8gb memory.

Can I fit a 3.5" HDD in this laptop?

No.  Even the thinnest 3.5" HDD is much thicker than this laptop.  I do not know of any laptop that takes a HDD that size.  You can install a 2.5" HDD or SSD but you will need to buy a caddy, which is hard to find for MSI and expensive.

I read that the SSD is split into two partitions. What are the sizes of each partition?

The 512gb option has 456gb available. There are partitions for Windows recovery and such but mine is not setup in multiple partitions otherwise.

I'm not a gamer but would this be OK for video editing ?

I don't do much video editing, but I bought mine mainly for coding. The i7 and 16gb of ram should be plenty to handle any kind of video editing software. The only thing that might not be ideal for you is the 512 gb SSD. I'm not sure what kind of space requirements you're looking for, but HD video takes up alot of space and 512 gb will go fairly quickly.

60 mz.  It's a real deal and a great computer.  the 1650 will have limits for the FPS type of games;newer ones.

if your doing normal browsing should last at least 6 hrs, but if you're watching videos and cranking up the gpu to watch in excellent quality mine only last like 2 hrs and i am plaing aoe2 remastered right now with all cores cranking i have to plug this thing in otherwise maybe a hr i'll get with playing games.
