I feel really nervous about the cooling block. Is there a way to ensure my system won't get drenched if there's a problem?

The video card and radiator is a sealed system as long as you hook everything up fine and don't mess the hoses you should be fine. I haven't had any issues with the video card and not a drop on anything, I am very happy that I bought it and it can handle any game that I have I tried so far. I run star wars battlefront on eyefinity with no issues. It does get hot but it varies depending on the game that I am running. That game is in beta so I know that it why and the game is Rust in steam. You should worry about the card leaking, I can understand if you put it together yourself but it comes already to be hooked up from MSI.

Will this graphics card be compatible with a 990 Sabertooth FX M/B?
Will this graphics cards be enough for a 27" 144 MHz monitor?

In theory the fury x will power your monitor easily. Mine powers my 40 inch Phillips 4K monitor.  The only downside to run in this card in a sabertooth 990fx is the fact your pci slots are 2.0 instead of 3.0.   Now 3.0 cards are able to function in a 2.0 slot at the cost of limitation of available ram.   Your PC would limit the card down to 3 gig.    I would shop aroun for a AMD mb that has pci 3.0 slots.
