I don't see an option to enable uPnP anywhere, does this router have uPnP? If not, that's shocking as it's marketed as a Gaming router! Even dirt cheap routers from a decade ago have uPnP!

UPnP is an "ease of use" feature made for users who do not know how or care to manage their networking themselves. This is a high end, highly secure product meant for people who can do what UPnP does themselves. UPnP is not secure. Not having it is a feature.

How many devices can this support on the 2.4 GHz Wi-Fi? It seems to have a limit of 32 devices in my testing. Any devices more than that simply fail to connect. If I turn off a device, a new one can get online. This seems like a really low device count considering my WiFi 5 Spectrum router which was awful, supported 50+ devices.

The MSI RadiX AXE6600 WiFi 6E Tri-Band Gaming Router can connect up to 60 devices.

Could a VPN program be installed in this WIFI router?

Yes, it has OpenVPN support baked in. Under the main menu, go to Advanced->VPN.
