Does this product include DisplayPort cables? My monitor uses DVI and I notice this card has no DVI port.

This product has 3 displayport and 1 hdmi port, if your monitor doesn't have either you will need a converter to use your monitor. No actual cables come with this product.

You can use any of the DisplayPorts (3 total) that is on the back of the GPU to connect to your monitor for 144hz support as long as your monitor has 144hz capability.

How much of a performance boost will I get when upgrading from a GTX 1060 6GB to this?

I don't have personal experience with the GTX1060, but I just purchased the RTX2060 for my enw build and have been gaming on it for the last few days and it has been AMAZING for me. It also comes basically ready for VR which may be what you're looking for, or not. But overall I would recommend the RTX2060 to anyone who is looking for a cleaning graphic quality and smother run. 
Also a good way to look at it is through "userbenchmark". Just search "gtx 1060 6gb vs rtx2060" on google and it would be the first link!

yes, but because the card uses 3.0 lanes it will use 2 times the amount of 2.0 lanes

as long as you have 16 PCIE 2.0 lanes it shouldn't be a problem as it will count as using 8 PCIE 3.0 lanes which will run the card just fine

Listen, Get the 2060 i have been building Gaming  rigs and PC for peoples businesses for years and i just built myself another Gaming Rig that will last and play any thing that comes out in the next 7 to 10 years. And i Built it with the GTX 2060. The 2060 is far the best card i have installed to date. I have the brand new game 2 months old, Anthem, the 2060 cuts through it like butter. I also been re playing the Bat Man Arkhem Series Flawlessly as well as Mafia III and WITCHER 3, I just finished playing Assassins Creed Black Flag, and   Rogue,  and started playing AC Unity. ALL Flawless, NO LAG HIGH FPS every game into the 100s FPS.  GET THIS CARD GET 2. I got one then 3 weeks  later i ordered a second mainly to lighten the load to take the Physix off the CPU and to put it on the 2nd GPU Card. I do think thats  the best way togo but that there is just me.   Dude you wont be sorry.   NUFF said.....

Full answer: graphics cards don't tend to come with any power cables, instead the cables come with your power supply so if you're building for the first time you should already have the correct cable if you bought a new psu as well.  happy building :)

Will this be an appropiate choice for video editing?

I say for in depth video editing you would want to go up a little higher a RTX 2070TI or higher. If you just going to noodle around with editing then sure its ok. But like i said, for In Depth, go up a couple notches. Hope this helps.  P.S. This card is pretty good for gaming its in the bottom of the top of the best. if that makes sense?
