Nominal TDP is 120W. They can consume up to 150W when overclocked to get maximum hash rates.

Yes, 8 GB of VRAM is good for even Triple A titles. I've had this GPU for a while and have had no problems

How many monitors can you run at the same time off this card?

I've run 3 monitors. 1 HDMI, 1 DVI and 1 out of the first display port. All were 21 inch Dell monitors but the display port monitor did flicker.  I've tried swapping the monitors but the display port still flickers. I'm going to spend some time trying to tweak the custom display drivers to see if that makes a difference, or I will try a 
Monoprice 121972 MST splitter to see if that makes a difference. I'll update late Aug 2020 after I try the splitter and X-plane 11.

I don't think it would be a meaningful enough improvement to justify a purchase. Especially at its current price. Also even if it was worth it, there are much better RX 570s to buy.

Installation booklet said that my package would include a driver disk, but it did not.  Am I able to install all drivers for my card from the manufactures website?

Thank you for contacting us in regards to your question. The best method of updating the driver, would be updating the driver through the manufacturer website as it would have the most recent graphics card update. Which may not be featured on the driver disc.

where do I get the power cable since it doesn't come with it?

it's the 8 pin connector from your computers power supply. if your power supply does not have one you will have to replace it with one that does, and it's recommended to be at least 450 watts.
