These are full length replacements

will these cables work with Phanteks AMP Series 550W 80PLUS Gold? do all cables work with any modular psu?

No they are not all the same. I have an EVGA PSU and bought Corsair cables and they didn't have the same pinouts. Best bet would be to buy Phanteks cables.

Will these work on the AX760 and AX860?

Yes. Most mass produced cables will be compatible with almost all PSUs, certainly with the AX760 and AX860.
