will this work for Corsair Air Series SP 140 LED 3pin fan connector to tge 4-pin motherboard fan headers?

ANY standard 3-pin fan plug will properly connect to the standard 4-pin socket such as on this Y-cable. Just remember that your MB has to support the extra fan load (should be no problem) and that the 3-pin fans speed will be constant since it isn't PWM.

How well will this work for a CPU water cooling system with a 4 pin fan and 3 pin water block pump combo?

Should work fine. You can plug a 3 pin connector into 4 pin and vice versa. But, if you try running them from the pwm speed (thats what the fourth pin is), I'm not sure if it'll run the pump at full speed or at the percentage you want since it may run the voltage at 100 and modulate the speed using the pwm. If it does, just tell it to use voltage instead of pwm for speed and it should work just fine.

will this power 2 fans 1x180mm an 1x80mm without a molex connection to the psu?

It works great for 2 140s off of the motherboard header

The Coboc TX4SPL2-12 splitter cable allows you to connect two PWM fans to a single pin header on your motherboard. Only one of the male connectors has the full 4-pin structure for complete PWM function. And the cable is fully sleeved, making for a clean, professional look inside your chassis.
