Question 1

Couldnt i just take 2 normal SLI bridges and slap them on? this just looks like it is two sli bridges stuck on a piece of metal.

You can but you will not get half the data transfer speed that this item can provide.  The ribbon cables just aren't designed for the speed that this new 1000 series of cards needs for optimal performance.  Had to use ribbons till this was available and as a gamer I can say I saw a significant difference in my system whan I installed this.  Worth the money and if anything, if you are someone trying for a high end look to your rig then this looks way better than ribbons.

Question 2

Can I use this with 2 different GTX 1080 cards?  Like a PNY 1080 OC and an EVGA 1080 SC?  (they both have the same core clock and only 1mhz difference in boost clock)

As for card compatabily I would contact the manufacturers just to be safe.  Even a small variation in cards could result in killing one or both so best to be extra careful.  As for this item it will work with any sli compatable cards but you may not get the top data speed.

Question 3

Is the distance between connections on this bridge (single space) 60mm?  I measured with both my 1070s installed and they came out to about 2.5" (63mm)?

PCI Express X1 or any slot underneath your very first PCI Express strip for your graphics card mine did the same thing the HB bridge will move them 3 millimeters is not much I'd still go for one slot might not have been screwed in tight Lee or they may have dropped a little since you installed them but I want so it should be 60 millimeters I it will be fine

Will this HBM bridge work with EK-FC1080  water blocks?

If you are using the two gray PCI-E slots, you'll notice that there is one PCI x1 slot between them.  That means that you should use the 1-slot spacing.  If you have the mother board and want to measure, it should be about 60mm between the two slots.
