Does the older version of this product work with "Windows 8 FSX  Also doe the Pedals work?

There have been some issues with Windows 8 forgetting controllers but this is a windows issue not an issue with controllers or FSX. Please check avsim forums for a better answer. Avsim is a flight sim community with over 100,000 members and is a great help in solving any issue you may have. I run 7 and this controller works great and is a lot better than the saitek

Question 2

How many degrees of rotation does the yoke offer, and please specify whether your answer is total or to each side, (e.g. Logitech G27 wheel offers a ridiculous 900 degrees of rotation total, which is 450 degrees to each side) ??

I am not real sure what you are asking. For turns, you have 180 degrees. That would send you in a complete circle. When you pull up on the voke and also push down, it will serve a 360 degree pattern. Hope this helps.
