Are these drives any faster than a 2 1/2 inch SSD?  Also, what application are these used in?

Significantly faster. I use this for my boot drive and my system comes up in seconds. Also games load assets much faster. This is important for VR games.

What heat-sink do you recommend on getting for the Patriot SCORCH M.2?

"Scorch!"..sure lives up to it's name, YES. six screws I prefer to spreading stretchy bands, lots of those I see for sale. Instead, the one called:
Heat sink Warship Gold Bar    ...is well worth a couple extra dollars, no worries of chipping off bits of your module SSD

Its a PCIe SSD, so it should work fine in a motherboard that supports PCIe M.2
